1929 Ginger Fruit Loaf

Won first prize in The Mirror Recipe Contest (reference)

Ingredients:

  • 3 oz. (90g) flour

  • pinch of salt

  • 4 oz. (120g) butter

  • 3 oz. (90g) sugar

  • 1 large teaspoonful baking powder

  • 6 oz. (180g) sultanas

  • 1 oz. (30g) sweet almonds

  • ½ teaspoon ground cinnamon

  • ½ tablespoon of ground ginger

  • 1 egg

  • milk to mix

Method:

  1. Rub the shortening into the flour; add the salt, baking powder and cinnamon mix well.

  2. Stir in sugar, sultanas and almonds (blanched and cut into thin shreds)

  3. When these dry ingredients are thoroughly mixed, add well beaten egg and enough lukewarm milk to form a light dough that will drop from the spoon.

  4. Turn at once into a well greased tin and bake in moderate oven for 1 hour approx.
